Louisiana Gumbo

Ingredients

Amount Measurement Ingredient
2 cups Minute® White Rice, uncooked
2 Tbsp butter
2 Tbsp all purpose flour
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped green bell pepper
1 clove garlic, minced
1 pkg (14 oz.) smoked turkey sausage, sliced
1 can (14 1/2 oz.) diced tomatoes
1 can (10 1/2 oz.) condensed chicken broth
1 pkg (10 oz.) frozen sliced okra, thawed*
1 Tbsp Cajun seasoning
1/4 tsp dried thyme leaves
1/2 lb shrimp, peeled and deveined
salt and ground black pepper, to taste

Directions

  • PREPARE rice according to package directions.
  • MELT butter in large skillet over medium-high heat. Stir in flour; cook and stir until light golden brown; about 5 minutes. Add onions, celery, bell peppers and garlic; cook 2 to 3 minutes or until tender.
  • STIR in sausage, tomatoes, broth, okra, seasoning and thyme; cover. Simmer 5 minutes, stirring occasionally.
  • ADD shrimp; cook 5 minutes or until shrimp are pink. Season with salt and pepper to taste. Serve with rice.
  • * Or substitute 1 package (10 ounces) frozen cut green beans for okra.
