Tex-Mex Bake

A perfect family meal, all in one dish!!!

Ingredients

Amount Measurement Ingredient
1 cup Minute® White Rice or Minute® Brown Rice, uncooked
1 lb ground beef
1 can (15 oz.) chili beans
1 can (10 oz.) diced tomatoes and green chilies
1 bag (12 oz.) crushed tortilla chips
1 lb prepared cheese product, cut into cubes, divided
sliced green onions and sour cream, optional

Directions

  • PREHEAT oven to 350º F.
  • PREPARE rice according to package directions; set aside.
  • BROWN meat in large nonstick skillet over medium heat; drain off excess fat.
  • MIX in cooked rice, beans and tomatoes with chilies. Cover bottom of baking dish with chips. Layer half of cheese over chips. Top with rice mixture. Top with remaining cheese.
  • BAKE uncovered, 15 minutes or until cheese is melted. Garnish with green onions and sour cream, if desired.
