Quick Oriental Feast

Ingredients

Amount Measurement Ingredient
1 cup Minute® Brown Rice, uncooked
non-stick cooking spray
1/2 lb boneless skinless chicken breast, cut into thin strips
2 cups fresh mushrooms, sliced
1 pkg (10 oz.) frozen pea pods, thawed, drained
1 can (8 oz.) sliced water chestnuts, drained
6 green onion, chopped
2 tsps cornstarch
1/2 cup reduced-sodium chicken broth
2 tsps reduced-sodium soy sauce

Directions

  • PREPARE rice according to package directions.
  • COAT large skillet with nonstick cooking spray. Heat over medium-high heat until hot. Add chicken; stir fry until chicken is no longer pink in center. Remove from skillet; set aside.
  • SPRAY skillet again with nonstick cooking spray. Add mushrooms, pea pods, water chestnuts and onions; stir fry until tender.
  • COMBINE cornstarch, broth and soy sauce in small bowl; mix well. Return chicken to skillet. Add cornstarch mixture; cook and stir until sauce is thickened. Serve over hot rice.
