Sweet and Sour Chicken Stir Fry

Sautéed chicken and sweet yellow peppers, broccoli and just a bit of sweet and sour sauce ... served over Minute® White Rice

Ingredients

1 Tbsp oil
1 lb boneless skinless chicken breast, sliced
1 1/2 cups yellow pepper strips (about 1 medium pepper)
1/3 cup sweet and sour sauce
1/4 cup balsamic vinaigrette dressing
2 Tbsp soy sauce
2 cups frozen broccoli florets, thawed
1 1/2 cups Minute® White Rice, prepared according to package directions

Directions

  • Heat oil in large nonstick skillet on medium-high heat. Add chicken and peppers; cook 8 minutes or until chicken is cooked through, stirring occasionally.
  • Add sweet-and-sour sauce, dressing, soy sauce and broccoli; mix well.
  • Cook 2 minutes or until heated through, stirring occasionally. Serve over the hot rice.
  • Instead of frozen broccoli, try snow peas.
