Ginger Chicken and Snow Peas

Ingredients

Amount Measurement Ingredient
1 cup Minute® Brown Rice, hot cooked
2 Tbsps lite soy sauce
1/2 tsp ginger, ground
1 large red pepper, cut into strips
2 cups snow peas, halved
1 medium onion, halved, cut into 1/4-inch-thick slices
1 pkg (6 oz.) grilled chicken breast strips

Directions

  • Prepare rice according to package directions.
  • Combine soy sauce and ginger in large nonstick skillet.
  • Add vegetables; toss to coat. Cook on medium-high heat 5 minutes or until vegetables are crisp-tender, stirring occasionally.
  • Add chicken; cook 3 minutes or until heated through, stirring occasionally. Serve over rice.
  • HINT: Substitute 1 teaspoon minced fresh ginger root for the 1/2 teaspoon ground ginger.
