Porcupine Meatballs

Ingredients

1 Tbsp butter or margarine
1 small onion, chopped
1 lb lean ground beef*
1 cup Minute® White Rice, uncooked
1 egg, lightly beaten
1 small packet meatloaf seasoning
1/4 cup water
1 jar (15 1/2 oz. or larger) spaghetti sauce

Directions

  • MELT butter in small skillet over medium high heat. Add onions; cook and stir until tender.
  • PLACE onions, meat, rice, egg and seasoning in large bowl. Add water; mix until well blended. Shape into medium-sized meatballs.
  • POUR spaghetti sauce into skillet. Bring to a boil; add meatballs. Return to a boil. Reduce heat to low; cover. Simmer 15 minutes or until meatballs are cooked through.
  • * Or substitute ground turkey.

    Round out each serving with 1/2 cup hot cooked rice and a serving of your kids' favorite vegetables.
