Shrimp Fried Rice

A quick and easy stir-fry ... make it a main dish with shrimp, or meatless adding extra vegetables instead of shrimp.

Makes 4 (about 1 cup each) Servings

2 Tbsps oil
3/4 cup cooked ham, cubed
3/4 cup sliced fresh mushrooms
1/2 cup frozen peas
1/4 cup green onion slices
1/2 lb cleaned medium fresh shrimp
1 1/2 cups cooked Minute® White Rice
3 Tbsps soy sauce
1 egg, lightly beaten


  • HEAT oil in large nonstick skillet on medium-high heat. Add ham, mushrooms, peas and onions; cook 4 minutes, stirring constantly.
  • ADD shrimp; cook and stir 4 minutes or until shrimp turns pink
  • STIR in rice, soy sauce and egg. Cook until egg is set, stirring occasionally.
  • For a meatless version, substitute extra chopped vegetables and/or cubed tofu for the ham and shrimp.
