Broccoli Cheese and Rice Soup

2 cups Minute® White Rice or Minute® Brown Rice, uncooked
1 pkg (10 oz.) frozen chopped broccoli, thawed
1 can (10 3/4 oz.) reduced fat condensed cream of mushroom soup
3 cups 2% milk
1 lb low fat processed cheese, cubed
shredded cheese (optional)


  • PREPARE rice according to package directions.
  • COMBINE broccoli, soup and milk in medium saucepan. Bring to simmer over medium heat.
  • ADD cheese and stir until melted. Remove from heat and stir in rice. Top with additional cheese, if desired.
