Spanish Rice Pronto

Ingredients

3/4 cup bacon drippings
3 medium onion, diced
1 1/2 medium green pepper, diced
4 cups Minute® White Rice, uncooked
4 1/2 cups water
6 cans (8 oz. each) tomato sauce
1 Tbsp salt
dash of pepper
1 1/2 tsps prepared mustard (optional)

Directions

  • Melt drippings in 6-quart kettle, large skillet or Dutch oven.
  • Add onions, green peppers, and rice, and cook and stir over high heat until lightly browned.
  • Add remaining ingredients, mixing well.
  • Bring to a boil.
  • Cover tightly and simmer 5 minutes.
