Creamy Chicken and Rice Casserole

Nancy submitted this recipe because she liked to make this dish with her friend Venus for a teacher luncheon.  With crisp red and green bell peppers, spicy jalapeño, and of course cheesy  chicken and rice, we think you will like it too!

Makes 6 Servings

1 red bell pepper, chopped
1 green bell pepper, chopped
1 jalapeño pepper, seeded and chopped (optional)
2 Tbsps butter
2 cups cooked chicken, diced
1 Tbsp garlic herb seasoning
2 cups chicken broth
2 cups Minute® White Rice, uncooked
4 ozs cream cheese, softened
4 ozs pasteurized prepared cheese product, cubed
salt and ground black pepper, optional


  • In a large skillet, sauté vegetables in butter over medium heat. Add chicken, seasoning and broth.
  • Bring to a boil.
  • Add rice. Remove from heat and let stand 5 minutes. Add cheeses and stir until evenly melted. If desired, season with salt and ground black pepper.
