Breakfast Muesli

Make at the beginning of the week for a wholesome start to your day all week long. Minute® Multi-Grain Medley and Greek yogurt with fruit makes this breakfast filling, sweet and almost like a morning treat.

1 bag Minute® Multi-Grain Medley, uncooked
1 cup 2% milk
1 small orange, zested and juiced
1 red apple, chopped
1/2 cup fat free plain Greek-style yogurt
1 tsp vanilla extract
1/4 cup honey
1/2 tsp ground cinnamon
3/4 cup dried fruit (prunes, apricots, apples, cranberries, raisins, etc.)
3/4 cup chopped nuts
seasonal fresh fruit, optional


Prepare 1 bag of Multi-Grain Medley according to package directions, using milk for water.  (If desired, use skim milk, soy or almond milk).  Set the cooked rice aside.  In a medium-sized mixing bowl, add orange zest and juice, and chopped apple. Stir to combine.  Add in yogurt, vanilla, honey, ground cinnamon, dried fruit, chopped nuts and cooked Multi-Grain Medley; stir until well combined. Cover the bowl and place the muesli mixture into the refrigerator and cool for an hour or overnight.  To serve, top generously with fresh seasonal fruit, if desired.
