Cuban Beans and Rice with Chipotle Chorizo Chicken Sausage

Delicious sautéed chicken sausage, with fresh onions, crisp peppers and garlic simmered with Minute Brown Rice and just the right touch of black and pinto beans.

Makes 6 Servings

Ingredients

1 Tbsp olive oil
12 oz al fresco® Chipotle Chorizo Chicken Sausage, cut into 1/4-inch slices
1 cup white onion, chopped
1 cup red bell pepper, chopped
2 each garlic cloves, minced
1/2 each jalapeño pepper, seeded and finely chopped
1 3/4 cups reduced sodium chicken broth
1/2 tsp ground cumin powder
2 cups Minute® Brown Rice, uncooked
1 cup black beans, drained and rinsed
1 cup pinto beans, drained and rinsed
1/4 cup fresh cilantro leaves, chopped

Directions

Heat oil in a medium skillet over medium-high heat.  Add sausage and sauté until brown, 3-5 minutes.   Add onions, bell pepper, garlic and jalapeno.  Sauté 2 minutes.  Add broth and cumin and bring to a boil.   Stir in rice, beans and chopped cilantro.  Reduce heat, cover and simmer 5 minutes.  Remove from heat and let stand 5 minutes. Serve garnished with cilantro leaves.
