Easy Chicken and Rice Tacos

... delicious, zesty chicken and rice tacos.

Makes 8 Servings


1 Tbsp butter or margarine
1 lb ground chicken
1 onion, chopped
1 pkg (1.25 oz.) dry taco seasoning mix
1 1/4 cups water
1 can (8 oz.) tomato sauce
1 1/2 cups Minute® White Rice, uncooked
1 can (15 oz.) kidney beans, drained and rinsed
16 prepared taco shells (heated)
1 pkg (8 oz.) shredded Cheddar cheese
1 cup shredded lettuce
2 tomato, chopped


  • MELT butter in large skillet over medium-high heat. Add chicken and onions; cook and stir until chicken is cooked through.
  • STIR in seasoning mix, water and tomato sauce. Bring to a boil. Reduce heat to low; cover. Simmer 5 minutes. Add rice and beans; mix well. Cover; remove from heat. Let stand 5 minutes.
  • FILL taco shells evenly with chicken mixture; top with cheese, lettuce and tomatoes.
