Easy Beef Stew with Rice

1 Tbsp oil
1 lb trimmed boneless beef chuck, cut into thin strips
1 onion, coarsely chopped
2 Tbsps flour
1/2 tsp salt
1/4 tsp pepper
1 can (14 1/2 oz.) stewed tomatoes
1 jar (4 oz.) sliced mushrooms, drained
1 cup beef broth
1 cup frozen sliced carrots, thawed
1/2 tsp garlic powder
2 cups Minute® White Rice, uncooked


  • HEAT oil in large skillet. Add meat and onion; cook and stir until meat is browned. Stir in flour, salt and pepper.
  • STIR in tomatoes, mushrooms, broth, carrots and garlic powder. Bring to a boil. Reduce heat to low; cover and simmer 10 minutes.
  • MEANWHILE, prepare rice as directed on package. Serve stew over rice.
