Chicken and Rice with Broccoli Skillet

This recipe appeared on the 14 oz Minute White Rice box in 2001.

1 Tbsp vegetable oil
4 each boneless skinless chicken breasts
1 can (10 3/4 oz.) condensed cream of chicken soup
1 1/2 cups water
1/4 tsp paprika
1/4 tsp ground black pepper
2 cups broccoli florets
2 cups Minute® White Rice, uncooked


  • HEAT 1 tablespoon oil in large skillet on medium-high heat. Add chicken; cover. Cover 4 minutes on each side or until cooked through. Remove chicken from skillet; cover to keep warm.
  • ADD soup, 1-1/2 cups water, paprika and pepper to skillet; stir. Bring to a boil.
  • ADD broccoli and rice; stir gently. Top with chicken. Sprinkle chicken with additional paprika and pepper; cover. Reduce heat to low; cook 5 minutes.
