Orange Chicken and Rice

Makes About 3 to 4 Servings

1 cup Minute® White Rice, uncooked
1 jar (12 oz.) orange marmalade
1/2 cup orange juice (carton or fresh)
1/2 cup water
2 cups cooked, diced chicken
1 large orange (washed and sliced thin)
1 pkg sugar snap peas
slivered almonds (optional)


  • Prepare rice according to package directions.

  • In small sauce pan combine marmalade, orange juice and water. Simmer until blended and reduced about 50% (it should be like syrup).

  • In medium saucepan combine orange sauce, chicken, orange slices and peas. Heat until all ingredients are hot.

  • Serve over rice and sprinkle with almonds if desired.
