South of the Border Turkey Dinner

4 Ingredient meal ... start with healthy whole-grain brown rice, lean ground turkey, add in crisp southwestern-style corn and your favorite salsa !!

Makes 4 Servings


1 cup Minute® Brown Rice
1 lb ground turkey, cooked and crumbled
1 can (11 oz.) southwestern corn blend
1 cup salsa


  • Prepare rice according to package directions. Add cooked ground turkey, corn and salsa. Cook until heated through, about two minutes.
  • Add 1 cup shredded Monterey Jack cheese. Use as filling in tortillas and top with shredded lettuce and chopped tomatoes. Roll into burrito-sized tortillas and serve with sour cream
